My parents’ vision was to connect vibrant California culture with genuine Irish charm. Our menu celebrates comfort foods like warm Guinness bread with salted honey butter, or fish and chips, but also calls to the more adventurous hoping to try something like grilled octopus or rabbit fricassee.
My brother, Drew, and I head up the beverage program together. Drew is all about quality spirits, enlightened by fresh-squeezed juices and house-made syrups, and his beer list celebrates local breweries…with the obvious exception being Guinness.Â
Many of these wines can be savored by the glass at Fable and Spirit. They can also be purchased at our wine shop in Mission Viejo, Wineworks For Everyone.
My Summer Wine Picks
Terra Nostra Rose, Croatia, 2019
Crisp and clean, with bright red fruit, fresh lemon, and ocean-like saltiness. Made in Croatia from an indigenous grape called Sciacarello. Pair with fresh seafood, vibrant salads, and sunshine.
Audebert & Fils ‘Bourgueil’ Rose, Loire Valley, France 2019
Slightly richer in style, made from 100% cabernet franc. It has this great tangy mixed berry fruit, white pepper, and cherry blossoms aromas. Pair this wine, a roasted chicken, and any side you can imagine. The versatility of this wine makes it perfect for experimenting with an array of richer foods as well.
Pierre Riffault ‘7 Hommes’ Sancerre, France, 2018
It has aromas of fresh herbs, flint, and citrus, along with fruit flavors like pear and white peach. It is very vibrant and refreshing, so it is excellent on a hot day with salads and seafood.
Jumping Juice ‘Yellow Yellow’ Australia, 2019
This wine is 100% sauvignon blanc and 100% fun. Tasting notes include fresh grass, tropical passionfruit, pineapples, and cream. Made by Patrick Sullivan in Australia, it is unfiltered and fermented with the grape skins. It adds a textural mouthfeel that is unique.
Erste & Neue ‘Pinot Nero’ Italy 2018
100% Pinot Noir from Alto Adige, Italy. This wine is beautifully floral and light in body and showcases bright cranberry and pomegranate fruit balanced with nuanced twiggy spice. Perfect served with a slight chill. Great for pizza night.
Preston Kalogiros, Syrah/Viognier, Sonoma CA, 2016
Organically farmed in Dry Creek Valley, Sonoma, this Syrah is co-fermented with 6% Viognier. Begging for a BBQ and the sunset, it smells of wildflowers, rich black fruit, and a touch of smoke. BBQ wine all the way.
